Why I love this...

If you too don't have spare time to make breakfast in the morning but also think that most Bircher muesli/overnight oat concoctions you can buy in stores are both expensive and a bit...well..average then this is your solution. I promise this takes not more than five minutes to stir together in the evening (even after a couple of glasses of wine) and as it's mixed in its container there's basically no washing up either! The chia and pumpkin seeds add some healthy protein whilst the oats provide slow-release carbs that keep you going. Cheap, quick, healthy and tasty - what more can you expect from your breakfast?

Ingredients

4 Tbsp/35g Oats

1 Tbsp/7g Chia Seeds

1 Tbsp/10g Sultanas

1/2 Tbsp/5g Pumpkin Seeds

1 Tbsp/10g Maple Syrup

Dash Vanilla essence

60ml Hot water

40ml Plant based milk (I use oat)

25g Blueberries (or any other berry or fruit you fancy really)

Drizzle of Peanut butter (optional)


I have added a scoop of Maca to this before which adds a bit of extra energy! 

Equipment

  • Jar or cup to mix and store (make sure it has a lid)

  • Tablespoon

  • Measuring jug or scale, although you can measure most with the spoon and eyeball the liquids 


Appliances: Kettle to heat water, fridge to store

Preparation

  • Add all inrgedients up to the blueberries into your jar or cup

  • Stir well with the tablespoon

  • Top with bluerries and peanut butter

  • Cover and pop in the fridge

  • Yes, it really is that simple and will be completely ready to consume the next morning
