Why I love this...
Delicious, quick, super easy and waaaayyy cheaper than all the energy balls available commercially!
These make an awesome mid-Afternoon snack to keep hunger at bay and the zesty lemon adds a bit of a taste of sunny days!

Ingredients
12-14 dried apricots
2 medjool dates
3/4 cup coconut flour
2 large tbsp solid coconut oil
2 tbsp lemon juice
Dash vanilla essence
Dash water
Tiny pinch of salt
2 tbsp desiccated coconut (optional)
Equipment
Saucer
Tablespoon
Appliances: Blender or Food Processor, Fridge
Preparation
Add all ingredients to a high speed blender
Blend into a thick, paste-like consistency
Roll into balls and cover in desiccated coconut
Fridge for 30 minutes
Store in an airtight container at room temp for up to 5 days.
